how to make perfect cheese toast
- toast your bread (in this case, a sourdough english muffin) in the toaster to the point where it’s just *barely* under toasted
- slice up some cheese (goat milk chedder here) thinly, and layer on the toast evenly. Thinner slices melt better, even when you have a bunch of them
- put under the broiler for approximately 3 minutes, until the cheese just starts to get toasty brown spots
- top with slices of very ripe tomato (these green ones are from our CSA box and were killer)
- salt and pepper to taste
note: the pre-toasting is crucial, without it the bread won’t get toasted enough under the cheese, resulting in a lackluster cheese toast experience.
